These are a lovely, comforting side dish and are vegan too!
8 medium potatoes
2 tbsp olive oil
Juice of 1 lemon
4 tbsp chopped fresh herbs (for example oregano, rosemary, thyme, mint) or 2 tsp of dried herbs
8 cloves garlic, chopped
125ml water
Cut potatoes into wedges and place in a single layer in an ovenproof dish.
Mix oil, lemon juice, herbs, garlic and the water and pour over potatoes.
Cover and bake at 200oC/gas mark 6 for 45 minutes, until soft.
Uncover, drizzle with olive oil and bake for another 45 minutes until crisp.
