Our resident forager and Mindful-in-Nature course leader Brigit-Anna McNeill shares a fun Autumnal recipe to mark the 'dying of the season' and the turn towards Hallowe'en:
Says Brigit-Anna:
It is elderberry season, and these dark and beautiful berries are hanging in bunches from the gnarled and crooked elder tree known as the elder of the woods in the forests, hedgerows and fields.
Elderberry Gummies are a wonderful recipe to make and can be something else to make with your elderberry potion.
Ingredients
- 1 cup of your elderberry potion/syrup
- 1/4 cup vegan gelatin powder
- 1/2 cup of hot but not boiling water
- Silicone gummy moulds (we used skulls as we felt it matched the Autumnal season of descent and composting).
Directions
- In a small bowl, add 1/4 cup cooled elderberry potion/syrup, sprinkle gelatin powder over the surface (not in a pile) and quickly whisk in until dissolved.
- Add hot water and stir quickly until smooth.
- Add remaining potion/syrup and whisk until completely smooth.
- Pour into moulds and place in refrigerator for 1 to 2 hours or until completely firm.
- Pop out of moulds and store in airtight container with parchment paper between layers.
To use: Take 1 to 2 gummies daily. They'll store in the refrigerator for 2 to 3 weeks.
