Recipe: vegan and gluten-free brownie

Ingredients (makes 12)
- 170g gluten-free flour
- 200g sugar
- 70g cocoa
- 1 tsp gluten-free baking powder
- 1/2 tsp salt
- 200g blackcurrants, cooked and cooled
- 160g vegetable oil
Method
- Cook the blackcurrants until they've broken down. Allow to cool
- Mix together the flour, sugar, cocoa, baking powder and salt
- Then add the blackcurrants and oil and mix well
- Pour the mixture into a baking dish lined with baking parchment and bake at 180oC for 25 minutes or until a knife poked in the middle comes out dry
